Banana Bread Chocolate Cake with Almond Flour

Banana Bread Chocolate Bread with Almond Flour is packed with healthy, nutritious ingredients and easy to make! It can be eaten as a healthy, filling snack or even a tasty breakfast! I love this recipe as it can be made with a lot of ingredients you may already have at home like ripe bananas sitting on your counter and almonds, which you can blend to make your own flour! This delicious banana bread is mostly sweetened with bananas and some maple syrup. The other ingredients include eggs, almond butter and dark chocolate with a dash of cinnamon, baking soda and vanilla extract.

I first decided to make this delicious nutrient-dense banana bread during the early days of the Coronavirus when regular flour was becoming scarce and selling out fast at grocery stores due to the high demand! I was looking for a baking flour substitute for regular flour, so decided to make my own almond flour at home to bake a banana bread for the family!

Nut flours, including almond flour are high in protein, healthy fats and fiber. As almond flour is made from almonds whole almonds, this flour is flour is rich in vitamin E, which has been known to have a protective effect against free radical damage. According to the USDA, 1/4 cup of almond flour provides 170 calories, 15 grams of fat, 6 grams of protein, 2 grams of fiber, 6 grams of carbs and high in calcium and potassium.

In terms of storage, banana bread can be kept well-covered at room temperature for 3 days or in the fridge for 5 days and up to 3 months in the freezer!

Recipe

Makes 1 Loaf

Ingredients

  • 3 mashed bananas

  • 2 eggs

  • 1/4 cup maple syrup

  • 1/4 cup almond butter

  • 1 tsp vanilla extract

  • 2 cups of almond flour

  • 1/2 tsp of cinnamon

  • 1 tsp of baking soda

  • 1/2 cup dark chocolate chips

Directions:

  1. To make homemade "Almond Flour": Boil hot water. Add 2 cups of almonds for 1 -2 minutes. Drain almonds and remove skin. Lay peeled almonds on a paper towel for a few hours to dry. Add to blender and blend until it reaches a flour consistency

  2. Preheat oven to 350 degrees F.

  3. Add parchment paper to baking tin. Add eggs, bananas, almond butter, maple syrup, vanilla to a bowl and mix well

  4. In another bowl combine dry ingredients: almond flour, cinnamon, baking soda

  5. Add dry ingredients to wet ingredients and mix. Don’t over stir

  6. Fold in chocolate chips

  7. Pour in tin

  8. Top with some crushed almonds and chocolate chips

  9. Bake for 40 minutes until toothpick comes out clean

  10. Let cool & then remove from parchment paper delicious
